Our salsa provides more chunks with less liquid in every scoop. You get the sweet first, followed by the surprising and pleasant touch of heat. We have to admit, it’s pretty addictive. Minorcan Mike's is a family-owned datil pepper sauce company specializing in all things datil. Datil peppers have been apart of the O’Steen family legacy for generations. Minorcan Mike grew up in St. Augustine and vividly remembers his grandfather growing datil pepper plants in his hothouse. Mike grew up around datil peppers and learned at an early age how to cook with them - and how to perfect his family’s recipe to create the delicious sauce we enjoy today. He started making sauce as a hobby about 10 years ago for oyster roasts. Popular demand for his sauce led Mike back to his datil pepper roots and create his tantalizing datil pepper sauce. Since then, Mike has added datil pepper jelly and datil pepper salsa to his product lines.
Minorcan Mike’s Datil Pepper Sauce pays homage to Mike’s heritage. Mike is a direct descendant of the Minorcans who arrived on the shores of St. Augustine in the 1700s from the island of Minorca. Legend has it, that the Minorcans first are the ones who introduced the datil peppers to the First Coast (and the New World).
For those of you that may be unfamiliar with the datil pepper, it is a small hot pepper that only grows in North Florida and is in abundance in St. Augustine. It has become a popular centerpiece in a variety of local Minorcan recipes. Datil peppers are hot, they’re the same heat as their cousins, the habanero at 100,000 to 350,000 Scoville heat units, making it 12 to 120 times hotter than a jalapeño pepper. However, that heat is well diluted in Minorcan Mike’s Datil Pepper Sauce with a sweet and light tangy flavor that is quickly followed by the heat.

Minorcan Mike grows about 40% of his own datil peppers and then gets the rest from two local suppliers. 95% of all datil peppers are actually grown in St. Augustine and have become somewhat of a delicacy. Minorcan Mike’s datil sauce can act as an everyday condiment addition in the kitchen, as well as a dipper or cooking marinade. It is a delicious complement to eggs, burgers, other grilled meats, nachos, seafood dishes (especially oysters), soups and dips, and it also adds a tasty local kick to Bloody Marys.
